Crustacean, from latin crusta ('crust', 'shell'), is a class of animals arthropods that breathe through gills, that have two pairs of antennae and a variable number of appendicitis and which are covered by a usually calcified shell.
Crustaceans are a subphylum of arthropods. There are more than 67,000 species of crustaceans, such as crabs, shrimp, lobsters and lobsters. Most crustaceans are aquatic, living in fresh and salt water and at all depths.
All crustaceans have certain common anatomical features although their size is highly variable. The bodies are composed of several segments or metameres that usually belong to three regions of the body: the head (cephalon), thorax (greatly) and abdomen (pleon). The first segments of the thorax can reach the head forming the region known as the cephalothorax.
Crustaceans are a food and very rich fishery resource. Shrimp, for example, are eaten almost everywhere in the world. Most of the times, they are consumed cooked and headless, shell, fins and intestines. The shrimp cocktail, soup with shrimp and rice with shrimp are some of the most popular dishes that are cooked using this crustacean.
The gambas is an another crustacean that is consumed as food in the different regions of the planet. His body is rich in vitamins B and D and minerals such as phosphorus, iron, and iodine. The cocktail of prawns and prawns ceviche are among the recipes that can be made with this crustacean.
